2 Papaya (about 350 grams or 12 ounces)
3 Limes (juiced)
80 grams cane sugar
Lime zest (for garnish)

Preparation steps

1.

Cut the papayas in half lengthwise and scoop out the seeds with a spoon, then peel.

2.

Pour 300 ml (approximately 1 1/4 cup) of water in a small pot.

3.

Add the turbinado sugar.

4.

Bring the sugar and water to a boil over high heat.

5.

Reduce for about 5 minutes to make a thin syrup.

6.

Cut the papaya halves into small pieces and put into a mixing bowl.

7.

Add the sugar syrup and 100 ml (approximately 1/2 cup) of lime juice.

8.

Puree everything with a hand blender.

9.

Season with a little more lime juice to taste.

10.

Pour the fruit puree into a metal bowl, cover and place in the freezer.

11.

Freeze for 4 hours.

12.

Stir the puree every hour with a wooden spoon briefly.

13.

Scoop balls of the papaya sorbet.

14.

Serve in dessert bowls garnished with lime zest.
