400 grams Cherry tomatoes
2 garlic cloves
2 Tbsps olive oil
1 splash dry white wine
freshly ground peppers
1 pinch sugar
50 grams freshly grated Parmesan
Basil (for garnish)

Preparation steps

Cook the pasta in  boiling salted water until al dente.

Rinse the tomatoes and have a few for garnish, then set aside. Blanch the remaining tomatoes in boiling water, then remove. Peel and chop the tomatoes. Peel and finely chop the garlic. Sauté the garlic in the oil, then add the wine and chopped tomatoes. Simmer for 10 minutes, then season to taste with salt, pepper, and sugar. Mix in the drained pasta, and toss to combine. Divide into bowls then top with the reserved tomatoes and sprinkle with the cheese.

Garnish with the basil and serve.
