- 125 grams Parmesan
- 300 grams Pastry flour
- 4 tsps Baking powder
- Salt, peppers
- 2 medium eggs
- 125 ml of milk and Buttermilk
- 6 Tbsps olive oil
- 1 packet 8th - Fresh herbs (frozen)
Preparation steps

Coarsely grate the Parmesan. Mix the flour with baking powder, salt and pepper. In a separate bowl whisk together the eggs, milk, buttermilk, olive oil and herb mix. Stir in the flour mixture until combined. Stir in 100g (approximately 3 1/2 ounces) of the Parmesan.

Pour the batter into a greased muffin tin and sprinkle with the remaining Parmesan. Bake in a preheated oven at 200°C (approximately 400°F) for 25-30 minutes.
