700 grams waxy potatoes

1 Tbsp butter
2 eggs
250 grams Whipped cream
150 grams grated Parmesan
1 handful freshly chopped Fresh herbs (such as thyme, parsley, chives)
freshly ground peppers
Nutmeg (freshly grated)

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Boil the potatoes in salted water for about 20 minutes. Drain, let moisture evaporate slightly, peel and slice. Peel the onion and garlic, cut the onion into rings and chop the garlic. Sautée both in a pan with hot butter. Remove from heat. Beat the eggs with the whipping cream, half of the Parmesan and the herbs and season with salt, pepper and nutmeg. Combine the potatoes with the garlic and onion, place in a greased baking dish and pour in the egg mixture. Sprinkle with the remaining parmesan and bake for about 25-30 minutes, or until golden brown.
