1 Tbsp raisins
2 Tbsps Shredded coconut
1 tsp Curry powder
1 tsp finely chopped Basil
1 ½ tsps salt
3 Tbsps vegetable oil
100 grams Whole Grain Pasta
2 Banana
100 grams baby Spinach
2 Tbsps salted Peanuts
50 grams sour Whipped cream
1 tsp Mustard
1 tsp honey

½ lemon (juice)

Preparation steps

Rinse the raisins, pat dry and transfer to a bowl with the meat, egg and oatmeal. Add 1/2 tablespoon grated coconut, 1/2 teaspoon curry, the basil and 1/2 teaspoon salt to the meat mixture and form  walnut-sized balls. Roll the meatballs in the remaining coconut, pressing to adhere.

Heat 2 tablespoons of oil in a large skillet and saute the meatballs until brown and crisp, about 15 minutes. Cook the noodles in a pot of boiling salted water until al dente, drain. Peel the bananasCut and thinly slice 1 banana. Rinse the spinach thoroughly, drain and cut into fine strips.

Toss the pasta with meatballs, spoon the banana slices and peanuts into a bowl. Cut the remaining banana into pieces, place in a bowl and mash with sour cream, mustard, honey and lemon juice and season with salt and pepper.,Transfer to a blender and puree. Mix the banana sauce with the spinach strips and fold into the meatballs and noodles.
