400 grams short Pasta (such as ditali or penne)

250 grams Snow peas
¼ Lettuce
1 garlic clove
5 scallions
80 grams black Olives
peppers (freshly ground)
80 milliliters olive oil
3 Tbsps white balsamic vinegar
50 grams shaved Parmesan

Preparation steps

Cook the pasta in plenty of salted boiling water until al dente. Rinse pasta with cold water and drain. Rinse snow peas, trim ends and blanch in salted boiling water, about 5 minutes. Rinse with cold water and drain.

Rinse and spin lettuce dry, then tear into bite-sized pieces. Peel and finely chop garlic. Rinse, trim and cut scallions on the diagonal. Drain olives. In a large bowl, mix pasta with snow peas, olives, garlic and scallions. Stir in olive oil and vinegar and season with salt and pepper. Let stand briefly. Place lettuce in another large bowl and top with pasta salad. Serve with shaved Parmesan.
