- Ingredients
- 500 grams wide Pasta (such as Pappardelle or Rigatoni)
- salt
- 250 grams fresh Broad bean
- 2 garlic cloves
- 2 handfuls fresh Basil
- 4 Tbsps olive oil
- freshly ground peppers
- lemon juice
- 75 grams grated Parmesan
- 4 Basil (for garnish)
Preparation steps
1.
Cook the pasta in boiling salted water until al dente.
2.
Rinse the beans over a sieve, drain and blanch in boiling water for 5-6 minutes. Drain and rinse thoroughly in cold water. Peel the garlic and finely chop. Rinse the basil, pat dry and chop coarsely. Heat the olive oil in a saucepan. Add the garlic and sauté until translucent. Remove beans from skins. Add half of the beans to the garlic and cook 5-7 minutes while stirring. Season with salt, pepper and 1 tablespoon lemon juice. Add basil and puree briefly with an immersion blender. Stir in the pasta and the remaining beans, add Parmesan and toss everything again. Arrange pasta on plates with a basil sprig and a drizzle of olive oil, if desired.
