7 ozs Morel (mushrooms)
2 shallots
1 clove garlic cloves
14 ozs Spaghetti
salt
4 ozs dried Fava bean
3 Tbsps olive oil
5 ozs Vegetable broth
peppers
1 pinch Saffron
ground allspice
4 Tbsps grated pecorino romano (or Parmesan)
½ handful Chives

Preparation steps

1.

Thoroughly rinse the morels. Shake dry and clean the outside with a small brush. Peel the shallots and garlic and dice finely. Cook the pasta in a large pot of boiling salted water until al dente. Add the fava beans in the last 3-4 minutes of cooking. Drain the pasta and beans together.

Heat the oil in a large skillet and sauté the shallots and garlic. Add the morels and cook for 3-4 minutes. Add the broth and season with pepper, saffron and allspice. Add the beans and pasta to the pan. Stir in the cheese and season with salt and pepper. Cut the chives into large pieces and stir into the pasta. Transfer to plates or bowls and serve.
