500 grams Spaghetti
salt
12 Anchovy fillet
50 grams Shelled pistachio
1 handful cilantro
3 Tbsps butter
4 Tbsps olive oil
½ lemon (juiced)
freshly ground peppers

Preparation steps

1.

Cook spaghetti in plenty of boiling salted water until al dente. Drain.

2.

Roll up 4 anchovy fillets and set aside for garnishing. Pat dry remaining anchovies and chop. Chop pistachios coarsely. Rinse cilantro, shake dry and chop.

3.

Heat butter and olive oil in a pan and saute anchovies, stirring. Add cilantro and pistachios to the pan and drizzle with lemon juice. Add pasta and toss well. Season with salt and pepper.

4.

Arrange pasta in soup plates and garnish with anchovy rolls. Serve.
