2 stalks marjoram
2 Tbsps olive oil
3 ozs white wine
8 ozs Soy creamer
2 Tbsps Crème fraiche

Preparation steps

1.

Cook the pasta in boiling salted water until al dente according to the package directions.

Clean and slice the mushrooms. Peel and finely chop the shallot and garlic. Rinse, trim, and julienne the radicchio. Rinse and dry the marjoram, then remove the leaves.

Heat the oil in a pan. Sauté the mushrooms briefly over high heat, then remove and set aside. Sauté the garlic and shallot briefly, deglaze with the wine, and bring to a simmer. Stir in the soy cream and creme fraiche. Add the mushrooms, reduce the heat to low, and cook for 1-2 minutes. Season to taste with salt and pepper.

Heat the butter in a separate pan. Cook the radicchio over medium heat for 5 minutes.

Drain the pasta and mix with the radicchio. Season with salt, divide onto plates, and add the mushrooms. Top with the sauce and garnish with the marjoram.
