400 grams Cauliflower
1 onion
1 garlic clove
300 grams Penne
salt
1 tsp Peanut oil
1 tsp freshly grated ginger
freshly ground peppers
100 milliliters Tomato juice
100 milliliters Vegetable broth
40 grams raisins
1 Tbsp Rice vinegar
Chili powder
2 Tbsps Pine nuts

Preparation steps

1.

Rinse and trim the cauliflower and cut up into florets. Peel the onion and cut into rings. Peel the garlic and chop finely.

Cook the pasta in plenty of boiling salted water until al dente.

Meanwhile, heat the oil and sauté the onion with the garlic and ginger. Add the cauliflower, season with salt and pepper and pour in the tomato juice and vegetable broth. Simmer for about 8 minutes until al dente. Mix in the raisins and season the vegetables with the vinegar and some chili powder.

4.

Mix the pasta into the vegetables and transfer to warmed plates. Serve showered with pine nuts.
