Pasta with Salsicca and Cherry Tomatoes

- 1 onion
- 2 garlic cloves
- 500 grams Italian sausage
- 2 Tbsps olive oil
- 1 Tbsp Tomato paste
- Noilly Prat
- 400 grams peeled Tomatoes (canned)
- 1 sprig rosemary
- 1 sprig thyme
- 2 Sage
- 4 Basil
- 150 grams Cherry tomatoes
- salt
- freshly ground peppers
- 1 pinch sugar
- Basil (for garnishing)
- 40 grams grated Parmesan
Preparation steps
Peel onion and garlic and chop finely.
Push sausage meat in equal portions from casing and shape into balls.
Heat oil in a large frying pan and brown sausage balls on all sides. Remove from pan. Saute onion and garlic until translucent, add tomato paste and vermouth. Simmer briefly and add canned tomatoes. Rinse herbs, shake dry and chop. Add to the sauce and simmer for about 15 minutes. Rinse and halve cherry tomatoes. Ads sausage balls and tomatoes to the sauce and heat through. Simmer for about 10 minutes. Season with salt, pepper and sugar.
Cook pasta in plenty of boiling salted water until al dente. Add a little water to the sauce, if necessary. Drain pasta and arrange on plates. Top with the sauce, garnish with basil and sprinkle with Parmesan. Serve.
