Preparation steps

Blanche the tomatoes in boiling water. Rinse with cold water, then peel, quarter, remove the seeds and finely chop. Rinse zucchini and coarsely grate. To clean mussels, brush thoroughly under running water, and throw away any that are open.  Add the wine in the pot, cover and cook over low heat about 8 minutes, until the shells have opened. Peel and finely chop the onion and garlic. Remove shellfish from the potand keep warm, covered. In a pan, heat the oil and saute the onions and garlic for a few mintues, then add in the mussels and saute a few minutes more. Add the tomatoes and zucchini and simmer for 5 minutes.

Meanwhile, cook penne in plenty of salted water until al dente. Season the sauce with salt and pepper. Rinse the chives, shake dry, and chop finely. Stir into the sauce. Add in the mussels, cover and simmer a few minutes. Drain the pasta and mix immediately with the sauce. Serve hot.
