500 grams Spaghetti
500 grams ripe Tomatoes (peeled and cored)
100 grams Bacon (mixed, not smoked, diced very small)
1 onion (finely chopped)
2 garlic cloves (finely chopped)
2 dried Peperoncini (crumbled)
½ bunch glossy parsley (finely chopped)
50 grams pecorino romano (freshly grated)
butter
salt
freshly ground peppers

Preparation steps

1.

Cut the tomato pulp into small pieces and press through a sieve.

Heat some butter in a frying pan and sauté the bacon and onion over low heat while stirring. Add the garlic and stir in the tomatoes and chiles. Season with salt and pepper and simmer.

Meanwhile, cook the spaghetti until al dente. Drain and mix with the sauce.

Shower with parsley and grated pecorino cheese. Add 1-2 squares of butter and serve immediately.
