1 lemon (juiced)
1 pinch sugar
1 Tbsp apple cider vinegar
2 Tbsps vegetable oil

Preparation steps

1.

Thaw the peas and blanch for 3 minutes in boiling salted water. Remove from the water, rinse under cold water, and drain well.

Peel and quarter the apples. Remove the seeds, finely dice, and mix with the lemon juice.Mix the apples with the peas. Mix the sugar, vinegar, and oil. Season the vinegar mixture salt and pepper. Mix the marinade into the apple mixture, and let the mixture infuse.

3.

Rinse and dry the arugula. Divide into glasses, top with the marinated apple mixture, and serve.
