Preparation steps

Quarter apples and pears, core and peel, cut into thin slices. Mix with lemon juice.

Separate 2 eggs. Beat egg whites until stiff, gradually add 50 grams of sugar (approximately 1 2/3 ounces). Whisk butter until creamy, gradually add whole eggs, egg yolks and vanilla sugar, mix well. Combine flour with cornstarch and baking powder and sift over egg mixture, fold gently. Fold in egg whites, apples and pears.

Spread batter in a lined with parchment paper baking pan and smooth. Sprinkle with almonds and bake in preheated oven at 180°C (approximately 350°F) (gas mark 2-3, fan 160°C) for about 40-45 minutes. After 30 minutes of baking, cover cake with foil. Remove from the oven and cool. Dust with powdered sugar and serve.
