1 Tbsp honey
3 Tbsps softened butter
3 Tbsps brown sugar
3 eggs
9 ozs Sour cream
3 ozs chopped Hazelnuts
2 Tbsps Semolina flour

Preparation steps

1.

Preheat the oven to 400°F. Grease four ovenproof single-portion ramekins with butter and dust with sugar.

Peel the pear and the apple, cut into quarters, remove the cores and cut both into thin slices. Mix with 2 tablespoons lemon juice and the honey and then distribute into the ramekins.

Beat the butter, sugar and the lemon zest until creamy. Separate the eggs and beat the yolks gradually into the butter.  Stir sour cream into the mixture along with half of the nuts and the semolina. Beat the egg whites with 1 tablespoon lemon juice until stiff and fold into the sour cream mixture. Pour into the ramekins over the fruit and sprinkle with the remaining nuts. Bake in the oven for about 25 minutes until golden brown.

Remove from oven, let cool briefly on a wire rack. Best served warm.
