Preparation steps

1.

Preheat the oven to about 220°C (approximately 430°F). Preheat the broiler.

2.

Blanch the tomatoes for a few seconds in boiling salted water, then remove. Peel and quarter the tomatoes, then remove the core and finely dice. Peel and finely dice the onion. Rinse and trim the peppers. Halve, and remove the seeds and membranes. Broil skin side up until the skin has blackened and blistered (about 10 minutes). Remove from the oven, peel, and finely dice. Rinse and halve the chili lengthwise. Remove the seeds and membranes, and finely dice. Peel and finely dice the ginger. Peel and quarter the apples and pears. Remove the cores, and finely dice. Add the prepared fruits and vegetables to a saucepan with the sugar, cider, mustard seeds, and raisins. Bring to a boil, stirring often. Reduce the heat to medium and simmer covered for 40 minutes. Season to taste with pepper and vinegar. Divide into prepared jars, seal tightly, and cool completely.
