1 roll Puff pastry dough (about 10 oz)
2 ozs Hazelnuts
14 ozs Pear
1 egg yolk
7 ozs Sour cream
salt
freshly ground peppers
9 ozs Blue cheese (i.e. Gorgonzola)
1 Tbsp fresh thyme
thyme (for garnish)

Preparation steps

1.

Roll out the pastry on a baking sheet lined with parchment paper. Prick with a fork several times.

Preheat the oven to 400°F convection.

Coarsely chop nuts. Rinse the pears, cut into quarters, remove the seeds and cores and cut into wedges.

Mix the egg yolk with the sour cream and season with salt and pepper. Spread the sour cream mixture evenly over the puff pastry and cover with pears. Sprinkle with coarsely crumbled cheese, nuts, and thyme.

Bake in preheated oven until golden brown, 25-30 minutes.

4.

Cut the tart into pieces, garnish as desired with fresh thyme and serve while still hot or lukewarm.
