1 ¼ cups toasted Pine nuts
1 ½ cups cream (48% fat)
1 tsp vanilla extract
1 ½ cups light brown sugar
5 ozs honey
3 Tbsps unsalted butter

Preparation steps

1.
Line a 20cm|8" square baking tin with non-stick baking paper and butter the paper. Sprinkle the pine nuts on the base.
2.
Heat the cream and vanilla in a heavy-based pan to a simmer. Reduce the heat to very low and keep hot.
3.
Heat the sugar and honey in a large heavy-based pan, stirring occasionally until the sugar has dissolved and is just starting to boil.
4.
Boil steadily without stirring, until a little of the mixture forms a hard crack when dropped into chilled water;154°C|310°F on a sugar thermometer.
5.
Add the butter, then slowly stir in the warm cream. The mixture will bubble furiously.
6.
Continue to cook, stirring, until a little of the mixture can be rolled into a firm ball between your finger and thumb when dropped into cold water; 120°C|250°F on a sugar thermometer.
7.
Remove from the heat and pour the hot caramel into the tin, keeping the pan moving back and forth as you pour, so that the nuts don’t float. Leave to set for at least 5 hours.
8.
Turn the caramel out and remove the paper. Cut the caramel into squares with a sharp knife.
