2 egg whites
140 grams sugar
140 grams blanched almonds (finely ground)
70 grams Pine nuts
1 generous pinch lemon zest

Preparation steps

1.

In the bowl of an electric mixer, beat the egg whites with the sugar, almonds and lemon zest until very thick and stiff, about 15 minutes.

With your hands, break off pieces of the dough and shape into 30 crescents. Roll the crescents in the pine nuts.

3.

Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.

Place the crescents about 2-inches apart on the baking sheet and bake until golden.

4.

If desired, roll in sugar and let cool. Store in an airtight container and serve the cookies with coffee.
