Ingredients

For the dough
½ cube Yeast (21 g)
1 pinch sugar
450 grams Pastry flour
4 Tbsps olive oil
1 tsp salt
For the topping
1 kilogram ripe Tomatoes
300 grams Mozzarella
salt
freshly ground peppers
4 Tbsps olive oil
1 bunch Basil

Preparation steps

1.

For the dough, crumble yeast into a bowl and add sugar and  200 ml (approximately 1 cup) lukewarm water. Dissolve yeast and sugar and stir in flour, olive oil and salt and knead to a smooth dough. Cover and let rise in a warm place for about 30 minutes.

Divide dough into quarters and shape into 4 balls. On a floured surface, roll out dough into circles, about 22 cm (approximately 9 inches) diameter and leave edges a little thicker and place 2 pizzas on each greased baking sheet.

For the topping, blanch tomatoes in boiling water, drain and peel, and cut into small pieces and season with salt and pepper. Spread tomatoes over pizza crust and leave a small margin. Cut mozzarella into thin slices and place over tomatoes and drizzle with a little olive oil.

Bake pizzas in batches in preheated oven at (approximately 425°F) for 10 minutes and sprinkle pizzas with chopped basil and drizzle with olive oil and bake for 10 additional minutes. Remove pizzas from oven and let cool slightly and serve.
