Pizza with Tomato and Cheese
Ingredients
- For the dough
- ¼ cube Yeast (10 grams)
- 1 pinch sugar
- 220 grams Pastry flour
- 4 Tbsps olive oil
- 1 tsp salt
- For the sauce and topping
- 600 ripe Tomatoes
- 1 Tbsp Tomato paste
- 1 shallot
- 1 garlic clove
- 2 Tbsps olive oil
- 300 grams Mozzarella
- salt
- freshly ground pepper
- ½ tsp dried oregano
- 2 Tbsps olive oil
Preparation steps
For the dough, crumble the yeast into a bowl and stir with about 100 ml (approximately ½ cup) of lukewarm water and the sugar until smooth. Add the flour, olive oil and salt to the yeast, and quickly knead to a smooth dough. Cover the dough and let rise in a warm place for about 1 hour.
Divide the dough into 2 portions. Roll out each portion on a floured surface into pizza bases of about 22 cm (approximately 10 inches), leaving the border a little thicker. Place the pizza bases on a greased baking sheet.
For the sauce, blanch the tomatoes, peel and chop. Peel the shallot and garlic, and chop finely. Heat 2 tablespoons olive oil in a pan and saute the shallot and garlic in it. Add the tomatoes and tomato paste and cook for about 15 minutes. Season with oregano, salt and pepper. Remove from heat and let cool.
Spread the prepared sauce over the pizza bases, leaving a small margin. Cut the mozzarella into thin slices, place over the pizza bases and drizzle with a little olive oil.
Bake the pizzas in a preheated oven in a preheated oven at 220°C (fan: 200°C, gas mark 4) (approximately 420°F) for about 15-20 minutes.
Remove the pizzas from the oven and garnish with fresh tomato slices, oregano and olives. Serve immediately.
