For the dough
350 grams Pastry flour
½ cube Yeast

4 large Tomatoes
300 grams Feta

2 Tbsps balsamic vinegar

Preparation steps

For the crust, dissolve the yeast with sugar in about 125 ml (approximately 1/2 cup) of lukewarm water, then mix with the remaining dough ingredients and knead with the dough hook of the hand mixer until smooth. Allow to rise in a warm place.

Cut the feta cheese into small cubes.

Put the dough on a floured surface, knead, shape into a roll and cut into 4 parts. Roll out each part into a small pizza. Place on a greased baking tray. Distribute the feta cheese over each, leaving a border free, drizzle with a little olive oil and bake in preheated oven (200°C or approximately 400°F) for 25 minutes.

Rinse the tomatoes, remove the seeds and chop. Toss the tomatoes with oil and vinegar. Garnish the pizzas with the marinated tomatoes and arugula and season with salt and pepper.
