Preparation steps

1.

Peel the plantain and cut into about 1.5 cm thick slices (approximately 1/2 inch). Heat some oil in a large pan and fry the plantain slices on both sides until golden brown. Remove and drain on kitchen paper.

Flatten the slices slightly and season both sides with salt, pepper and chili flakes.

Heat the fat again and fry the slices a second time, until browned and crisp.

Serve with a mango salad or avocado if desired.
