2 very ripe plantains (very ripe, peeled and halved)
¼ cup vegetable oil
1 Tbsp vanilla extract
1 tsp ground cinnamon
2 Tbsps white sugar (optional)

Preparation steps

Heat vegetable oil in a large skillet over medium-high heat. Cut each plantain half into three strips. Gently lay plantain strips into hot oil; drizzle vanilla extract over plantains and sprinkle with cinnamon.

Place a cover on the skillet and cook until completely browned, about 6 minutes on each side. Transfer to paper towels to drain the excess oil. To serve, transfer to a plate and sprinkle with sugar.
