250 grams softened butter
1 pinch salt
250 grams sugar
4 eggs
1 organic Orange (juice and zest)
2 tsps Baking powder
400 grams Pastry flour
100 grams ground almonds (blanched)
100 milliliters milk
400 grams Red Currants
500 grams Mirabelle plum
60 grams Pine nuts
powdered sugar (for dusting)

Preparation steps

1.

Preheat oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.

For the dough, cream butter with salt and sugar until light and fluffy. Gradually add eggs and beat until creamy. Stir in orange juice and zest. Mix baking powder with flour and almonds. Slowly add to dough, alternating with milk, until dough is smooth and spreadable. Spread onto baking sheet and smooth.

For the topping, rinse currants and plums and pat dry. Strip currants from panicles and remove pits from plums. Distribute evenly over dough and bake for about 45 minutes. Cake is done when toothpick inserted in center comes out clean. During the last 10 minutes of baking, sprinkle cake with pine nuts.

Remove from oven, let cool and serve dusted with powdered sugar.

Serve with whipped cream if desired.
