- 1 kilogram Plum
- 8 Tbsps vegan Egg substitute (Powdered)
- vegan butter (for the pan)
- 250 grams vegan butter
- 200 grams sugar
- 1 pinch salt
- 1 Vanilla bean
- 500 grams Pastry flour
- 3 tsps Baking powder
- 125 milliliters Rice milk
Preparation steps
Rinse plums, cut in half and remove pits. Preheat the oven to 180°C (approximately 350°F). Mix egg substitute in a bowl with 80 ml (approximately 3 ounces) of water and allow to swell. Meanwhile butter the springform pan. Mix butter in a bowl with sugar and salt until fluffy. Halve vanilla bean lengthwise and scrape out seeds with a sharp knife and add to the bowl. Continue stirring, gradually add egg substitute mixture and continue to whisk until frothy. Add flour and baking powder, mix well, add rice milk and stir into a thick batter. Pour half of batter into the greased springform pan and cover with half of plums (cut side up). Pour remaining batter over top and cover with remaining plums. Bake cake in the preheated oven for about 50 minutes. If the cake is becoming too dark, cover with aluminum foil during cooking time. Remove from the oven, let rest for 10 minutes, then loosen springform pan rim and leave the plum cake to cool on a wire rack.
