Plums are rich in fiber, which gets our digestion going. In addition, the purple fruits shine with lots of potassium, which helps to keep the water balance of the body in balance. The whole wheat flour provides more fiber and also has more minerals compared to light flour.
The dough for the vegan plum cake is a great basic plant-based recipe that can be used to conjure up many other fruit cakes. For example, how about a summery apricot cake or an autumnal apple pie with a little cinnamon?

- 1 ¾ ozs Coconut oil
- 1 oz coconut sugar
- 1 ¾ ozs apple sauce (unsweetened)
- 3 ½ ozs Oat Milk
- 7 ozs Spelt- wholemeal flour
- 2 tsps cream of tartar
- salt
- 18 ozs Plum

Preparation steps
Combine melted coconut oil, coconut blossom sugar, applesauce and oat drink. In a separate bowl, mix whole wheat flour, baking powder and a pinch of salt.
Then add flour mixture to the other ingredients and mix well. Pour the batter into a springform pan (greased if necessary).
Wash and clean plums, cut in half and remove the core and cut them into wedges. Then spread plums on the batter.
Bake vegan plum cake in preheated oven at 180 °C / 350 °F for 40-45 minutes. Then remove from the oven, let cool slightly and serve.
