- 2 stalks Celery
- 1 carrot
- 1 bunch scallions
- 100 grams Red onions
- 2 stalks fresh Tarragon (or 1/2 teaspoon dried)
- 400 milliliters fish stock (from a jar)
- White vinegar
- 1 tsp salt
- 3 Tbsps white Candy
- 2 tsps Mustard seed
- 4 cloves
- white peppercorns
- 4 Plaice fillet (without skin)
- Dill (for garnishing)
Preparation steps

Rinse and thinly slice celery. Peel carrot and cut into thin sticks. Rinse scallions and cut into rings. Peel and dice onions. Rinse tarragon, shake dry and pluck off leaves.

Combine fish stock, vinegar, salt, sugar candy, mustard seeds, cloves and peppercorns in a shallow wide pan. Add celery, carrot and onions and simmer for 3-4 minutes.

Rinse plaice fillets, pat dry and cut along once. Roll up plaice fillets and thread on wooden sticks.

Add tarragon and scallions to the broth. Add plaice rolls and remove pot from the heat and let fish cool in the broth. Arrange on plates and serve garnished with dill.
