- 4 Whole Grain Rolls
- 4 slices Tofu (each weighing approx. 100 g)
- 4 Plum tomato
- ½ Cucumber
- 4 Lettuce (Lollo biondo)
- 2 Tbsps flour
- 2 eggs
- 2 Tbsps Polenta
- 2 Tbsps breadcrumbs
- 1 Tbsp parsley (chopped)
- Oil (for frying)
- salt
- freshly ground peppers

1 Large knife, 1 Cutting board, 1 Citrus juicer, 1 Small bowl, 1 Small knife, 1 Pot, 1 Wooden spoon, 1 Measuring cups
Preparation steps
1.
Split the bread rolls.

Wash and slice the tomatoes, removing the hard core at the top.

Wash and thinly slice the cucumber.
4.
Wash the lettuce leaves.
5.
Whisk the eggs. Mix the polenta with the breadcrumbs and parsley. Season the tofu with salt and pepper, then dip first in flour, then in the egg and finally coat in breadcrumbs and polenta. Heat the oil and fry the tofu burgers for 4-5 minutes, until golden brown.

Cover the bottom halves of the bread rolls with tomatoes, cucumber and lettuce and place a tofu burger on each one. Replace the top halves of the rolls and serve.
