Preparation steps

Butter brioche mold and sprinkle with flour.

Rinse potatoes and cook in boiling salted water for 25-30 minutes. Drain, peel and press through a potato ricer. Cool slightly. Separate eggs and combine yolks with cheese, potatoes and flour. Season with salt, pepper and nutmeg. Beat egg whites until stiff and fold into potato mixture. Pour batter into the mold, spread evenly and bake in preheated oven at 180°C (approximately 350°F) for about 45 minutes.

Remove from oven, cool slightly and invert cake onto a plate. Serve warm or cold.
