Ingredients

for

For the mushrooms
400 grams Porcini mushroom
1 onion
1 garlic clove
40 grams butter
salt (pepper)
For the sauce
2 tsps butter
1 Tbsp Pastry flour
½ cup milk
1 shallot
salt
2 Tbsps Sour cream
200 grams Whipped cream

Preparation steps

1.

For the mushrooms; clean mushrooms and cut into slices. Peel onion and garlic and chop finely. Heat butter in a saucepan and saute onion and garlic until translucent.

Add mushroom slices and saute until almost all liquid has evaporated. Season with salt and pepper. For the sauce: heat butter in a small saucepan, sprinkle with flour and saute briefly. Add milk, whisking constantly.

Peel shallot and chop finely, add to sauce and bring to a boil. Simmer for about 30 minutes, stirring occasionally. Season with salt and pepper and add creme fraiche and cream, whisk well. Add mushrooms adn bring to a boil. Place into bowls and serve immediately.
