50 grams dried shiitake mushrooms
4 Tbsps Teriyaki sauce
2 Tbsps sugar
4 Pork tenderloin (each about 150 grams)
2 Tbsps soy sauce
220 grams Udon Noodle
1 sm can Bamboo shoots (drained)
200 grams Bok Choy
salt
freshly ground peppers
2 Tbsps Sesame seeds

Preparation steps

1.

Soak the mushrooms in water for about 8 hours. Remove the mushrooms and reserve the liquid. 

2.

Stir together the teriyaki sauce with sugar and 2 tablespoons of the mushroom water. Slice the pork in half lengthwise and transfer to the marinade. 

3.

Rinse the bok choy and the bamboo shoots.

4.

Cook the pasta in boiling salted water for 15 minutes, then drain. Combine the remaining mushroom water with 2 liters (approximately 8 cups) of water, soy sauce, mushrooms, bok choy and bamboo shoots and simmer for 5 minutes. 

5.

Heat the grill to high and grill the pork until brown, about 2 minutes per side. 

6.

Ladle the noodles with vegetables into serving bowls. Arrange the pork over the noodles. Sprinkle with sesame seeds and serve.
