350 grams Pork tenderloin

2 scallions
125 grams Oyster mushrooms
1 Zucchini
2 carrots
1 Tbsp clarified butter
4 centiliters Cognac
150 milliliters Vegetable broth
3 Tbsps Whipped cream
2 tsps green peppercorns

Preparation steps

Trim the pork of hides and sinews, cut into thin slices and season with salt and pepper.

Trim scallions, rinse and cut into rings. Clean oyster mushrooms and cut into strips. Rinse zucchini, peel carrots and cut both into thin strips.

Heat the clarified butter in a large pan and cook the fillet slices in portions on each side about 1-2 minutes. Remove and set aside. Sauté scallions in the butter. Add mushrooms and vegetables. Pour in cognac, bring to a boil and cook about 4 minutes until al dente. Stir in broth, quickly bring to boil, add the meat again and stir in the peppercorns. Season with salt and immediately serve with noodles.
