800 grams Spare rib
2 garlic cloves

2 Tbsps soy sauce
3 Lemon leaves
2 Basil
3 Baby carrots
3 red Pepperoncini
vegetable oil (for sauteeing)
2 Tbsps red Curry paste
3 Tbsps Fish sauce
3 green peppercorns

Preparation steps

Cut spareribs into small pieces. Peel garlic and finely chop with the trimmed cilantro root. Mix together the soy sauce, cilantro root and garlic together and pour over the spareribs. Cover and marinate in the refrigerator 1 to 2 hours, turning occasionally. Rinse the lemon leaves, pat dry and chop.

Rinse the basil sprigs, pat dry, pluck off the leaves and chop. Rinse, trim and cut the baby carrots and chile pepper lengthwise into thin strips. Heat a generous amount of oil in a pan and cook the spareribs until golden brown. Remove from pan and set aside.

Add a little oil to the pan and saute the curry paste shortly. Stir in the fish sauce and a little water. Mix in the spareribs. Add the baby carrots, lemon leaves, green peppercorns and peppers, mix everything together and simmer about 50 minutes. Sprinkle with basil and serve.
