2 kilograms Pork ribs
2 onions
2 garlic cloves
2 Tbsps vegetable oil
150 milliliters Dark beer (or non-alcoholic beer)
2 Tbsps Ketchup
2 Tbsps Tomato paste
1 tsp honey
1 Tbsp Dijon mustard
1 Tbsp Worcestershire sauce
1 Tbsp ground paprika
salt
Tabasco sauce
freshly ground peppers
400 grams Cherry tomatoes (on the vine)

Preparation steps

1.

Rinse the ribs, pat dry, and add to a pot. Pour enough water to cover the ribs, and bring to a boil. Peel and halve one onion and one clove of garlic, then add to the pot. Simmer for 30 minutes.

Add the oil to a pan. Peel the remaining onion, dice, and sweat untl translucent. Peel the remaining garlic, finely chop, and add to the onions. Add the beer, reduce slightly, then mix with the ketchup, tomato paste, honey, mustard, and worcestershire sauce in a bowl. Add the paprika, and season to taste with salt, tabasco, and pepper. Remove the ribs from the cooking liquid and place on a hot grill. Brush with the beer sauce and cook for 15-20 minutes, turning occasionally. Brush occasionally with the sauce.

Rinse the tomatoes and pat dry. Drizzle with olive oil, season with salt and pepper, and place on the grill.

Cut into single rib portions, and serve with the tomatoes on a platter.
