500 grams Pork tenderloin
1 lemon (juice)
100 milliliters sesame oil
1 tsp husked Sesame seeds
4 Tbsps soy sauce
1 handful cilantro
300 grams carrots
1 Cucumber
1 untreated Lime (Abrasion and juice)
2 Tbsps honey
4 Tbsps Peanut oil

Preparation steps

The night before, trim the pork of sinews and cut into large cubes. Mix with the lemon juice, sesame oil, sesame seeds and soy sauce. Cover and chill in the refrigerator overnight.

The next day, rinse the cilantro, shake dry and chop the leaves. Peel the carrots, cut into thin strips and blanch for about 2 minutes in boiling salted water. Quench in ice water and let drain well.

Peel the cucumber and cut into thin strips. For dressing, whisk together the lime zest, lime juice, honey and peanut oil. Mix half of cilantro with the pork and thread onto wooden skewers. Mix the carrots and cucumber with the dressing and the remaining cilantro.

Heat a grill pan and cook skewers on all sides a total of about 8 minutes. Toward the end of cooking, brush with the remaining meat marinade. Serve with carrot salad.
