Ingredients

700 grams lean Pork
2 Tbsps cornstarch
2 Tbsps Rice wine
1 egg
salt
500 milliliters vegetable oil (for cooking)
For Sauce
½ Leek
1 red Bell pepper
2 red chili peppers
1 Pineapple
10 grams ginger
2 garlic cloves
3 Tbsps sugar
3 Tbsps light Rice vinegar
2 Tbsps Rice wine
2 Tbsps light soy sauce
2 Tbsps sweet and sour Chili sauce

Preparation steps

1.

Rinse meat, pat dry and chop into about 2 x 2 cm(approximately 3/4 x3/4 inch) cubes. Combine rice wine, egg and a pinch of salt. Beat well. Coat meat and refrigerate.

Prepare sauce. Rinse leek, cut into strips. Rinse peppers, halve and remove seeds and ribs. Chop as finely as possible.  Peel pineapple, core and cut into cubes. Peel adn finely chop ginger and garlic.  Combin sugar, vinegar, rice wine, soy sauce and chile sauce, mix well.

 Heat oil in a wok. Cook meat for about 3 minutes,drain on paper towels and keep warm in preheated oven at 100°C (approximately 200°F).

Add a little oil to the wok. Saute peppers, chile, leek, ginger, garlic and pineapple for about 3 minutes. Add sauce and cook for about 2-3 minutes. Add meat, mix well and serve immediately.
