If you need to move quickly or the beetroot season is already over, you can also use the pre-grown roots.

- 400 grams Beets
- ½ stalk cinnamon
- ½ tsp fennel seeds
- ½ stalk Licorice
- salt
- 400 grams waxy potatoes
- 2 Apple
- 1 Tbsp lemon juice
- 1 tsp butter
- 200 grams Crème fraiche
- peppers
- 3 Tbsps Pumpkin seed
Preparation steps
Rinse beets and place into a pot. Add just enough water to cover beets, add cinnamon, fennel, licorice and 1/2 of teaspoon salt. Bring to a boil and reduce heat. Simmer, covered, on medium heat for about 40 minutes.
Scrub potatoes and cook in boiling salted water for about 25 minutes.
Rinse and pat dry apples, core with an apple corer and slice thinly. Immediately sprinkle with lemon juice.
Drain beets and potatoes, peel and cool. Slice.
Butter baking dish and layer potato, beet and apple slices in it. Season sour cream with salt and pepper and spread over the layers. Sprinkle with pumpkin seeds and bake in preheated oven at 200°C (fan oven 180°C; gas mark 3) (approximately 400°F) for about 20 minutes or until golden brown. Remove from oven and serve.
