- 100 milliliters white wine
- 200 grams floury potatoes
- 1 shallot
- 1 Tbsp butter
- 125 grams Gorgonzola cream sauce
- 350 milliliters Vegetable broth
- 2 Tbsps scallions
- 1 Tbsp olive oil
- salt
- freshly ground peppers
- 2 small Baguette
- 1 Tbsp butter
Preparation steps

Peel and dice the potatoes. Peel and chop the shallot. Sweat the shallot and potatoes in butter until translucent. Pour in the wine and broth, saute briefly, and cover. Simmer for about 20 minutes. Remove from the heat and puree. Add the cheese and allow it to melt while stirring over low heat. Season with salt and pepper. Stir in the chives.

In a pan, briefly fry the baguette slices in hot butter on both sides.

Serve the soup with the toasted baguette.
