500 grams Kohlrabi
200 grams Snow peas
4 eggs
200 milliliters Whipped cream
100 grams Crème fraiche
80 grams freshly grated Cheese (such as gruyère)
2 Tbsps finely chopped parsley

Preparation steps

Rinse the potatoes and kohlrabi, peel, and cut into bite-size cubes. Rinse and trim the snowpeas. Put the vegetables in a greased casserole dish.

Preheat the oven to 200°C (approximately 390°F).

Separate the eggs into 2 different bowls. Beat the egg yolks with the creme fraiche, cheese and parsley. Season with salt and pepper to taste. Beat the egg whites until stiff peaks form. Gently fold the egg whites into the egg yolk mixture. Pour over the vegetables and bake until golden brown, about 45 minutes.
