4 cups waxy potatoes (peeled and sliced)
4 Tbsps olive oil
1 onion (diced)
0.333 cup Bacon (diced)
6 eggs
¼ cup Crème fraiche
0.333 cup green Olives (pitted, sliced)
1 Tbsp fresh parsley (chopped)
2 Tbsps Mountain cheese (grated)

Preparation steps

1.
Slowly fry the potatoes in hot oil in a high, oven-proof pan for around 10 min with a lid on turning every so often.
2.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
3.
Add the onion and bacon to the potatoes and fry for another 5 min.
4.
Mix together the eggs, crème fraîche, olives, parsley and the cheese and season with salt and ground black pepper. Pour over the potatoes and transfer to the oven for around 20 min.
