3 scallions
1 garlic clove
2 Tbsps olive oil
6 eggs
6 Tbsps milk

Preparation steps

Peel, rinse and cut the potatoes into thin slices. Thaw the peas. Wash the scallions, trim, cut some of the green parts into narrow strips and cut the rest into thin rings. Peel the garlic and finely chop.

In a pan, heat the oil and fry the potato slices until golden brown, turning occasionally, for about 10 minutes. Add the peas, scallion rings and garlic and cook briefly. Mix the eggs and milk, season with salt, pepper and nutmeg and pour over the potato mixture. Gently tilting the pan, distribute the egg evenly and cook over medium heat for about 8 minutes. Flip the omelette and cook for another 6 minutes. Remove from the pan, cut into pieces and serve garnished with scallion strips.
