For the dumplings
1 kilogram starchy potatoes (cooked the day before)
2 eggs
80 grams Potato starch
1 tsp dried marjoram
salt
120 grams Ahle Wurst
For the sauce
150 grams Smoked bacon
2 onions
100 milliliters milk
200 grams Sour cream
salt

Preparation steps

1.

For the dumplings: peel potatoes and grate finely with vegetable grater. Combine with eggs, cornstarch and marjoram, knead into moldable, smooth dough. Season with salt. Cu sausage into cubes. Make 12 dumplings out of potato dough, flatten and fill with sausage cubes, mold dough around sausage into a ball. Cook in boiling salted water for about 20 minutes on low heat.

For the sauce: cut bacon into thin strips. Cook in a hot pan until crispy. Peel onions, halve and cut into strips. Add to bacon and saute until golden brown. Deglaze pan with milk and bring to a boil. Remove from heat and stir in sour cream. Season with salt and pepper.

Remove dumplings with a slotted spoon and arrange on plates. Drizzle with sauce and serve.
