750 grams cooked potatoes
500 grams raw potatoes
65 grams Pastry flour
1 egg
salt
125 milliliters water
2 Tbsps chopped parsley
chopped Chives (2 tablespoons)
chopped Dill (2 tablespoons)
50 grams diced, streaky Bacon
2 chopped onions

Preparation steps

1.

Finely grate the cooked and raw potatoes separately. Squeeze the excess moisture from the raw potato with a cloth. Place the cooked and raw potato in a bowl.

In a bowl, stir the flour with the egg and salt. Add the water until a firm dough is formed.

Cook the bacon in a skillet on the stove. Remove with a slotted spoon and set aside. Add the onion and cook until soft.

3.

Stir the parsley, chives, dill, bacon and onion into the dough. Season with nutmeg to taste. Divide the dough into fist-sized dumplings. 

Bring a pot of salted water to a boil. Add the dumplings and cook until the dumplings float to the surface, about 15-18 minutes.
