Preparation steps

For the potatoes: Peel, rinse and coarsely grate potatoes. Season with salt and pepper. Form potatoes into small, thin cakes. Heat butter in a pan and cook cakes until golden brown on each side. Place in a preheated 70°C (approximately 150°F) oven to keep warm.

For the herbed cheese: Whisk together creme fraiche and quark. Season with herbs, salt and pepper. Mix well.
