250 grams Cream quark (40% fat)
salt

2 Tbsps lemon juice
1 Tbsp Argan oil
2 Tbsps scallions
500 grams waxy potatoes
500 grams Rutabaga
1 fresh garlic clove
1 egg
salt

1 pinch Nutmeg
clarified butter (for frying)
200 grams Smoked salmon
fresh marjoram (for garnish)

Preparation steps

1.

Combine quark, salt, pepper, lemon juice, argan oil and chives. Cover and chill.

Rinse potatoes and boil in salted water for about 25 minutes. Drain, peel and let cool. Peel rutabaga, cut into evenly sized pieces and boil in a little salted water. Coarsely grate potatoes. Drain rutabaga, mash with a potato masher and add to potatoes. Peel and mince garlic cloves. Stir garlic and egg into potato mixture. Season with salt, pepper and nutmeg.

Heat clarified butter in a nonstick pan. Add a tablespoon of potato mixture, flatten and smooth. Cook until golden brown, then flip and cook until other side is golden brown. Remove from pan and keep warm. Repeat until all potato mixture is cooked. 

4.

Serve warm cakes with chive quark, smoked salmon and marjoram.
