- 1 kilogram starchy potatoes
- salt
- 2 egg yolks
- 50 grams butter
- 1 tsp hot Mustard
- 2 Tbsps grated Parmesan
- 2 Tbsps scallions
- peppers
- Nutmeg
- Pastry flour (as needed)
- For breading
- 4 Tbsps Pastry flour
- 1 egg
- 80 grams breadcrumbs
- vegetable oil (for cooking)
Preparation steps

Peel, rinse and cook in salted water for about 30 minutes or until knife-tender. Drain and press through a potato ricer into a bowl and let evaporate. Add egg yolks, butter and mustard to potatoes and mix well. Add Parmesan and chives, mix well. Season with salt, pepper and nutmeg. Add enough flour to make malleable dough. Remove about 1 tablespoon of mixture and shape into a small oval patty (prepare all croquettes in the same manner).

Coat croquettes woth flour, dip into whisked egg and coat with breadcrumbs.

Heat oil in a pan and cook croquettes, few at a time, for about 4-5 minutes or until golden brown on both sides. Drain on paper towels. Serve.
