700 grams slightly waxy potatoes
2 scallions
6 Tbsps olive oil
1 tsp grated Lemon peel
½ lemon (juice)
salt
peppers (freshly ground)
Nutmeg (freshly grated)
1 Tbsp parsley (finely chopped)
1 garlic clove

Preparation steps

Peel potatoes, rinse and cut into sticks. Heat the oil in a pan and cook the potatoes over medium heat, stirring constantly.

Trim scallions, rinse and cut into thin slices. Peel garlic and chop finely. Just before the end of cooking the potatoes, stir in scallions, lemon zest and garlic. Finish cooking, then season the potatoes with salt, pepper and nutmeg. As desired round out the taste with a dash of lemon juice.
